Avacoda Icecream Stuffed Orange | Summer Special



Ice cream is one of the popular street food,I have given a fruity twist to the regular kulfi. Here is avocado ice cream in orange shells.
Ingredients :
Oranges -4
Sugar coated fennel seeds OR Tutti frutti - Few For garnishing
For Avacoda Ice cream :
Avacoda - 1 (halved & Pitted)
Salt - a pinch
Lemon Juice - 1 tbsp
Condensed milk - 1 can
Cold heavy Cream - 1 cup
Method :
*In a blender puree the avocado, salt, lemon juice and condensed milk.

*In a bowl whip the heavy cream until firm peaks form.With a spatula fold the half of the whipped cream to the avocado puree until combined.

*Then fold the mixture to the remaining half of the whipped cream until well combined.

*Transfer the mixture into a loaf pan and place it in the freezer for 4 hrs or overnight.

*Once the ice cream is ready, cut off the top of the oranges ,remove the pulp with a sharp knife or spoon without cutting the peel.

*Fill with avocado ice cream in orange bowl and freeze it for 4 hrs or until firm .

*Top withTutti frutti OR sugar coated fennel seeds while serving !!

Chocolate Brownie ( Vegan ) | Brownie Recipe


In this Recipe i added pureed dates to reduce the sugar  content,also make the brownie more fudgy.

Preparation Time : 10 mins
Cooking Time : 25-30 mins
Makes : 9 Pieces

Ingredients :

Part - I
Self Raising Flour - 1 Cup
Salt - 1/8 tsp

Part -II
Cocoa powder - 1/4 Cup
Dates -10 (Pitted and Soaked in Hot water for 10 mins)
Coconut Oil - 2 Tbspn
Vegetable Oil - 4 Tbspn
Flax Meal -2 Tspn
Water -1/2 Cup
Agave Syrup - 2 Tbspn
Raw Sugar / Jaggery - 1/3 Cup
Lemon Juice -1 Tspn

Method

*In a Blender add the Part -II ingredients  and blend it well.

*Preheat the oven at 180 °C.Grease the Square tin pan with little oil.

*In a Mixing Bowl add the Part I ingredients and date puree.Mix it well.

*Pour and smooth the batter in prepared pan.Bake it 25- 30 mins and a toothpick  inserted come out clean.


*Cooled it completely before slicing.

MY NOTES

*Instead of date puree you can also add chopped date.

*For  gooeyier brownie add more 2- 3 tbspn oil.

*You can adjust the sweetness and cocoa powder too.

Banana Nutella Trifle | Easy Desserts Recipe



Biscuit crumble, Nutella Cream, Banana & Chocolate. Topped with whipped cream, this layered dessert is heaven in a glass.

Preparation Time : 10 mins
Serves : 4

Ingredients

For Biscuit Crumble:
Any digestive biscuit (OR) Brownies (OR) Pound cake (OR) Cookies - as needed

For the Nutella Cream:
Cream Cheese - 150 gm
Nutella - 1/3 cup
Heavy cream - 1/2 cup
Vanilla Essence - 1/2 tsp
Banana - 2 Large
Chocolate/white Whipped Cream - For Garnish (Here i used storebought one)

Method

*Place cookies/biscuits in a large zip lock bag and use a rolling pin to crush the biscuits.

*To prepare the Nutella cream, mix all the ingredients in the given list and place it in a fridge until ready to assemble the desserts.


*Nutella cream can be placed in a piping bag for easy and even layering. You may also simply spoon those elements into the glasses. Slice the bananas.

*How to serve : In a glass, add a spoonful of crushed biscuits, add a layer of Nutella cream, then a layer of sliced banana and repeat the layers.


*Finally add a layer of whipped cream and garnish with a sliced banana and a few biscuits crumble.

MY NOTES:

*If making ahead, the dessert can be stored in the fridge without garnish up to 2-3 hours.

Filipino Leche Flan / Filipino Recipe


In the Philippines, Leche Flan is the top dessert of all time.Leche Flan (also known as crème caramel and caramel custard) is a dessert made-up of eggs and milk with a soft caramel on top.

Preparation Time : 10 mins
Cooking Time : 45 mins
Serves : 4

Ingredients

For Caramel :
Granulated Sugar - 1/2 cup
Egg Yolks - 6
Condensed Milk - 3/4 Cup
Milk - 1 cup
Vanilla Essence - 1 Tspn


Method
*In a Sauce pan add sugar ,melt on a slow flame.when the sugar becomes dark in colour .Spread it evenly over the invidual ramkins.Allow caramel to cool and harden.

*In a medium bowl add egg yolks,whisk it very well.Then add condensed milk+milk.Gently stir in a circular motion .Finally add the vanilla essence.


*In a cheesecloth or Metal strainer,strain the egg- milk mixture.Pour strained mixture into prepared ramkins.

*Cover the Ramkins with aluminium foil and steam it(Here i used my Idli pot for steam) for 40-45 mins.

*After steaming ,let the temperature cool down then refrigerate atleast 2 hrs.

*To Serve: Run a knife along the edges of the flan molds to loosen. For individual flans, turn the molds over onto a platter or individual plates.The flan should come out easily with the caramel on top.

MY NOTES

*It is hard to find a Llanera(Traditional Flan Mould) depending on ur location.It more convenient to use individual round pan or ramkins. 
*In this recipe you need only Egg yolk & Condensed milk.
 *Never beat the egg-milk mixture but stir gently in circular motion to prevent bubbles. 
*The real secret to smooth and cremy leche flan is straing the egg - milk mixture before pouring into moulds.
