OPOS Kara Chutney | OPOS Recipe | Side Dish For Idli& Dosa

 We can make chutney in OPOS too.I tried and tasted ,it was super easy and tasty .In Normal method sautening the onion and tomato takes a little bit time.Recipe adapted here .Thxs to RK sir,who is the founder of the OPOS Recipe.

Ingredients
Small Onion -1/3 cup
Tomato -2 big (cut into halves)
Red Chilli -5
Garlic cloves -5
Ginger -1 tsp
Tamarind -blue berry size
Salt -To taste
Gingelly oil -2 tbsp
Water -1 tbsp

Method 

*In PC first add water and oil and then add rest of the ingredients.
 *Cook at high flame for 4 whistle
*Once the pressure settled down grind it to a fine paste.

*If you wish add fresh tadka with oil+mustard seeds+hing and curry leaves.

*Serve with hot idlies/Dosa

Sweet Potato Brownies | Brownies Recipe | Vegan Recipe

 I bought some sweet potatoes to prepare poriyal but am not in mood to cook.Kids are want some brownies for snacks so i want to use that potatoes which was sitting in my table for almost a week.

I prepared brownies with that potatoes which was soft,gooey and chocolatic.No one find the secret behind the brownies until you revealed it.

Also its completely vegan too....

Preparation Time : 10 mins
Cooking Time : 20 mins
Makes : 9 Brownies

Wet Ingredients

Sweet Potato Puree -3/4 cup
Almond Butter -1 cup
Vanilla extract -1 tsp

Dry Ingredients:
Almond Flour -5 tbsp
Cocoa Powder -5 tbsp
Baking Soda -1 1/2 tsp
Salt -1/8 tsp
Sugar -3/4 cup (Powdered)

Method

Preheat the oven at 180 °C for 10 mins.

*Mix the Wet and dry ingredients seperately,Keep it aside.
*Add the dry ingredients to  wet ingredients gently.
 *Poured it in greased tray.
 *Bake it for 20 mins.
*After 20 mins it looks like a little underdone after it cools down it will firms up.

MY NOTES
*Dont bake more than 20 mins else you end up with hard brownies.

*Instead of almond butter you can use peanut butter too .

OPOS Mutton Kurma | OPOS Recipe | Mutton Recipe

Making Mutton Kurma in normal method is long time to prepare.After i cook in opos its very easy to prepare and tasty too...Thxs to RK sir,who is the founder of the OPOS Recipe.

Ingredients

Mutton - 1/2 kg
Onion -2 big(Chopped
Tomato -1 big (Chopped)
Salt - To taste
Ghee - 1 tbsp
Oil- 1tbsp
Water -1 cup
Whole garam masala - 1 each (bay leaf,clove,star anise &cardamom)
Chopped mint &coriander leaves - hand fistful
Lemon juice -2 tsp

To Grind

Grated Coconut - 1/4 cup
Cashews -5
Poppy seed -1 tsp(soak in hot for 10 mins)
OPOS Ginger Garlic Paste -1 tsp
Coriander Powder -1 tbsp
Green chillies -6
Turmeric Powder -1/2 tsp

Method

*Grind the ingredients given under"TO GRIND" to a fine paste by adding less water.

*In PC add 1 cup water+Ghee+Oil+Whole garam masala+ Chopped Onion
*Followed By chopped tomato.
 *Then by cleaned&washed mutton+coconut paste+salt+Chopped mint&coriander leaves.

*Cook at high flame for 8 whistles.Once the pressure settled down open and add lemon juice and mix.

MY NOTES

*I add green chillies instead of red chilli powder hence the colour.

*In this recipe if you omit turmeric powder its called white kurma.

*Serve with ghee rice,idli & dosa,roti too..

OPOS Veg Biryani | Biryani Recipe | OPOS Recipe


Can you believe biryani prepared in 6 mins..Yes first time i prepared it in opos came out really good.

Preparation Time : 30 mins
Cooking Time : < 6 mins
Serves : 2

Ingredients:

Basmathi - 1 Cup
Curd - 3/4 Cup
Green chilli - 1 slit
Mix Veg (Carrot,Beans,Green peas) - Each 1/2 cup
Salt -to taste
Ginger Garlic Paste -1 tsp
Fried Onion -1/4 cup
Red Chilli Powder -1 tsp
Garam Masala -1/4 tsp
Whole Garam Masala - 1 each(cloves,bay leaves,star anise,cardamom)
Ghee -1 tbsp
Water -5 tsp + 1/2 cup
Tomato -1 big(chopped)
Mint&Coriander leaves -handfistful

Method

*First Wash and soak the basmathi for 30 mins and drain the water completely.Keep it aside

*Mix the veggies with 3/4 cup curd+salt+slit green chilli+fried onion ,garam masala and red chilli powder.

 Layer 1 : add 5 tsp water+ 1 tbsp ghee+whole garam masala

Layer 2: Spread the 1 big chopped tomato+half of the veggies+basmathi rice+chopped mint & coriander leaves.

 Layer 3: Cover with remaining half of the veg and pour the 1/2 cup water without disturbing the layer.
 *Cover and Cook at high flame for 2 hisses.
*Once the pressure settled mix and serve !!

OPOS Kalyana Mor Kuzhambu | OPOS Recipe

Mor Kuzhambu is all time fav.Usili is best side dish for mor kuzhambu.Its very easy easy to make apart from soaking and grinding the ingredients.Recipe is my own and followed the method here.Thxs to RK sir,who is the founder of the OPOS Recipe.

Ingredients:
Ashgourd / Winter melon -1/2 cup(Peeled and chopped)
Sour curd - 1 1/2 cups(Whisked it well)
Grated Coconut -1/2 cup
Cumin Seeds -1 tsp
Green chillies -2
Coriander Seeds - 2 tsp
Dry Red chillies -1
Chopped Ginger - 1 tsp
Turmeric Powder -1/2 tsp
Salt - To taste
Curry leaves -1 sprig
Oil - 1 tsp + 1 tsp

For Soaking 
Raw rice - 1 tbsp
Tuvar Dal -2 tsp
Methi seeds -1/8 tsp

To Temper
Coconut Oil - 1 tsp
Mustard Seeds -1/ tsp
Hing -1/8 tsp
Dry Red chilli -1

Method

*Soak the ingredients for 1/2 an hr and drained the water completely.

*In a Kadai add 1 tsp oil roast coriander seeds,dry red chilli,green chilli,ginger one by one.

*Once the ingredients cools down grind it along with soaking ingredients+grated coconut and cumin seeds,Turmeric powder to a very fine paste by adding less water.

*In a PC add 1/4 cup water+ 1 tsp oil+Chopped ash gourd

 *Top with coconut paste and salt.
 *Cook at high flame for 2 whistles.
 *Release pressure,once it cooled down slightly add the whisked curd,Curry leaves and mix.

*Finally temper with the ingredients given under "To temper".

MY NOTES

*You can add veggies like,Arbi,Okra,Chow Chow ,Fresh or leftover vada or even u make it with plain too

OPOS Homemade Paneer | OPOS Recipe

 I hate making paneer at home in normal method .Its takes a long time and standing near by and stirring etc....hate hate to make paneer.
After saw the video tried and wonder that paneer is very soft and juicy.Thxs to RK sir,who is the founder of the OPOS Recipe.

Ingredients

Full Fat Milk -1 L
Curd -1/2 Cup

Method

*In 5L Pc add milk and curd.Cook at high flame for 5 whistle.
 *Once the pressure settled down filter it .

 *And Mould it for an hour.
*Then refrigerate the paneer for 1 hour and cut into desired shape.

OPOS Ratna Café Style Sambar | OPOS Recipe | Side Dish For Idli,Dosa & Pongal

 Frankly says that  i never tasted Triplicane Ratna Cafe Hotel Sambar till now but i heard about that hotel and their famous tiffin sambar.

But dont know the recipe.Few days back got the recipe from OPOS Fb group.Bhavani Ganesan mam shared this recipe.Tried it immediately.I really fall love in this sambar.

Speciality of sambar is they dont add tamarind.They add veggies like drumstick,brinjal,pumpkin etc but i made with plain.Thxs to RK sir,who is the founder of the OPOS Recipe.


Preparation Time : 10 mins
Cooking Time: < 6 mins
Serves :4

Ingredients:

Cooked Dal -1/4 cup ( I add  2 tbsp tuvar dal and 1 tbsp moong dal )
Chopped Tomato -2 big
Drumstick - 1 ( I didnt add any veggies,u can add yellow pumpkin,brinjal too)
Ghee - 1 tsp
Curry Leaves -1 sprig
Salt - to taste
Coriander leaves -for garnishing

For Masala 
Ghee -1 tsp
Coriander seeds -2 tsp
Dry Red Chilli -4
Compound Hing -1/4 tsp (Soak in water for 10 mins
Urad dal -1 tsp
Jaggery -1 tsp
Small onion -10 nos
Chopped tomato -1
Red chilli powder -1 tsp
Turmeric powder -1/2 tsp
Fenugreek seeds -1/4 tsp
Grated coconut -2 tbsp

For Tempering 
Ghee -1 tsp
Mustard Seeds -1/2 tsp
Cumin seeds -1/4 tsp

Method

*In a pan add ghee roast fenugreek seeds,red chilli,coriander seeds,urad dal and coconut one by one until you get nice aroma.

*Once its cooled down grind with 1 tomato,small onion,soaked compound asafoetida with water,red chilli powder,turmeric powder,jaggery to a smooth paste by adding little water.

 *In Pc add 1 tsp ghee,3 tbsp water,curry leaves and chopped 2 tomatoes.
 *.Followed by cooked dal and topped with  sambar masala.

*If you want to add veggies then add in top of the dal.
 *Cook at high flame for 2 whistles.
*Once pressure settled down add salt,mix and adjust with required water.and tempering with the ingredients given under "for tempering".

*Garnish with chopped coriander leaves.Serve with idli,dosa and pongal.

MY NOTES
*Always add small onions for better taste.

OPOS Pallipalayam Chicken | OPOS Recipe | Chicken Recipe

Pallipalayam Chicken is famous in Erode district which is situated in Tamilnadu.In this recipe they dont add red chilli powder,only add the dry red chillies according to one's taste.

Pls try to add small onion it gives authentic taste.
I followed the OPOS youtube video and finished it in less than 15 mins.Thxs to RK sir,who is the founder of the OPOS Recipe.


Preparation Time: 5 mins
Cooking Time : <10 mins
Serves :2

Ingredients 

Chicken -500 gms (I used chicken with bones,you can also add boneless )
Turmeric powder - 1/2 tsp
Coriander Powder - 1 tsp
Dry red chillies - 10 (long variety)
Small onion - 15
Curry leaves -few
Coconut bites -1/4 cup (chopped)
Water -1 tsp
Oil -1 tsp (I used coconut oil)
OPOS ginger garlic paste -1 tsp
Salt -To taste

Method

*Clean and Marinate the chicken with GG paste,Salt,Turmeric Powder,Coriander Powder.

*Chopped the small onions and Pinch the red chillies and remove the seeds completely.

 *In PC add oil+water+onion+red chillies+curry leaves
 *2 nd layer with marinated chicken and topped with coconut bites.
 *Cook at high flame for 3 whistles.
*You can see that it oozes out lots of water,so simmer it further more mins for dry and mix well.

MY NOTES

*I used broiler chicken so i go for 3 whistles only,if you are using country chicken give more whistles to cook.

*If you are using normal onion the taste will be differ.
