Annapoorna Hotel Style Sambar |OPOS Recipe

 Coimbatore Annapoorna Hotel sambar is famous  but i never tasted their sambar.Luckily found this recipe here.I tried this recipe in OPOS. Thxs to RK sir who is the founder of OPOS recipe.

Serve this sambar with rice,idli or dosa.Try to use gingelly  oil for authentic taste.

Preparation Time : 15 mins
Cooking Time :< 10 mins
Serves :4

Ingredients :

Cooked Toor dal -1/2 cup
Salt -to taste
Drumstick - 2 (diced)
Onion -1 chopped
Small onion -10
Tomato -1 chopped
Turmeric powder- 1/2 tsp
Ghee -2 tsp
Coriander leaves -for garnish
Gingelly oil -2 tsp

For Masala :
Gingelly oil - 1 tsp
Dry red chilli -2
Kashmiri red chilli -2 (optional)
Coriander seeds -1 tsp
Black pepper - 4
Fenugreek seeds - 4
Urad dal -1/2 tbsp
Channa dal -1 tbsp
Curry leaves -1 sprig
Hing -1/8 tsp
Grated coconut -2 tbsp
Tamarind - gooseberry size
Jaggery -1 tsp

To Temper :
Gingelly Oil - 1 tsp
Mustard Seeds -1 tsp
Curry leaves -1 sprig
Red chilli powder -1/2 tsp

Method

*Heat oil in kadai roast the ingredients given under "FOR MASALA " one by one except coconut,tamarind and jaggery without burnt.

*Switch off the flame,add the coconut,jaggery and tamarind.Mix.Let it be cool.Grind to a coarse and thick paste.


 *In 5L PC
Layer 1 : 1/4 cup water + 2 tsp oil

Layer 2 : Chopped onion+small onion+tomato+drumstick+Cooked dal on top with Masala paste+salt+turmeric powder
*Layer 3 : Cook at high flame for 4 whistle.
 *Adjust with hot water and salt.

*Finally temper with the ingredients given under"TO TEMPER" pour over the sambar.Add ghee and mix well with coriander leaves .
 *Serve with Idli ,Dosa or Rice.

*I prepared it for breakfast ,serve with idli...hmm its Blissful morning !!

OPOS Raw Mango Sambar | OPOS Recipe

 Can you believe that sambar is ready in 10 mins.On busy morning time OPOS is very helpful for me to prepare food.

I will share my all recipes one by one in OPOS cooking.Sometimes i stored cooked dal in freezer and used it later for quick cooking.If you dont have precooked dal then soak the dal for atleast 15 mins and go further more whistle or time for cooking.

Ingredients

Precooked Dal -1/2 cup
Tamarind Paste - 2 tbsp (I used oposed tamarind paste)
Onion -1 (chopped)
Tomato -1 (chopped)
Sambar Powder -2 tsp (I used homemade,share the recipe soon)
Slit Green chilli -2
Curry leaves - few
Chopped Coriander Leaves - 2 tbsp
Turmeric Powder -1/2 tsp
Raw Mango - 8 pieces
Salt - to taste
Premade Tadka - 1 tsp
Ghee -1 tsp (Used oposed ghee)

Method

*In PC first add ghee,1 cup water, chopped onion,tomato,curry leaves,green chillies,cooked dal,tamarind paste,salt,turmeric powder,sambar powder, and salt .

*Dont mix it,just add them.

 *Followed by in seperate vessel i kept the mango pieces.Cook at high flame for 2 whistles.
 *After 2 whistle switch off the flame,else it will be burn.Release the pressure.
 *Now mix it with cooked mango and ajust with required water.
*Then add the chopped coriander leaves and premade tadka.

MY NOTES
*You can add your fav veggies.

*If you dont have precook dal then soak the dal for atleast 15 mins and layer with above onion and tomato.In that case add more water too for cook the dal.

*If you dont have premade tadka then made fresh temper with oil,mustard seed,urad dal,hing and curry leaves.

Kalyana Sambar | Arachuvitta Sambar | Iyengar Spl | South Indian Sambar Recipes | No Onion No Garlic Recipe

In South Indian Marriage especially in Tamil Brahmin weddings this arachuvitta sambar is served on wedding feast. The aroma of spices and the taste of sambar cant determined it.Its paired with simply potato fry or appalam or pickle.Also learnt this from FB friend.

Mainly they used only ashgourd or mixed veg.

I used White pumpkin or ash gourd,carrot,beans,brinjal .

Preparation time : 15 mins
Cooking Time : 20 mins
Serves : 3-4

Ingredients

Toor Dal - 1/4 cup
Mixed Veg - 1 Cup
Turmeric powder - 1/2 tsp
Tamarind - a small lemon size
Salt -to taste

To Roast and Grind
Dry Red Chilli - 5
Dhania / Coriander Seeds -  1 1/2 Tbspn
Channa Dal - 1 Tbspn
Fenugreek seeds - 1/4 tspn
Grated Coconut - 1 1/2 tbspn
Oil -1 tspn

To Temper
Ghee - 1 tspn
Oil - 1 tspn
Mustard seeds - 1/2 tspn
Jeera - 1/4 tspn
Hing/Asafoetida - 1/4 tspn
Curry leaves -few

Method

*Cook the toor dal  by adding enough water and  turmeric pdr and mash it well.

*Soak the tamarind and extract the juice from it.

*Roast the ingredients except coconut given under 'to roast&grind'. Grind this along coconut with little water to a smooth paste.


*In a vessel add little oil saute carrot,beans& brinjal.cook it for half boil.
*once it cooked then add ash gourd and tamarind water.
*The raw smell of tamarind goes away add the ground paste and salt.
*Once it boil well add the mashed toor dal +required water.mix it well.
*Give a nice boil for further more mins & Swith off the flame
*Finally temper with the items given under'to temper' and add it to sambar.

MY NOTES

*Dont skip ghee while temper,it gives nice taste.

*The sambar will be thick  once it cooled,so add the water accordingly..
